Recipe from the Garden of Hope: Homemade Fruit Leather
Making Fruit Leather

Fruit Leather

  • 3 cups seasonal fruit of your choice (apples, pears, peaches, strawberries, etc.) or any combination of fruits and berries, washed and de-seeded as applicable. Leave the peel on for added nutrition.
  • Squeeze of lemon juice
  • Grape juice to sweeten
  • Dash of cinnamon or cloves if desired

Preheat the oven to its lowest setting (between 150 - 200 degrees). Line a baking sheet with parchment or silicone baking sheet. Spray lightly with non-stick cooking spray.

Cook the fruit in a pan on the stove for 5-10 minutes - adding up to ¼ cup water to keep it from scorching - until soft and smooth.

Making Fruit Leather

Puree the fruit in a blender or food processor, adding grape juice to taste for sweetness, until smooth. Pour puree onto a prepared baking sheet and tilt the pan to form as thin and even a layer as possible. Bake in a preheated oven for 2-8 hours, until the fruit is barely tacky to the touch and peels off the sheet easily. (If you have a fruit dehydrator, you can fill the top tray of the dehydrator and cook for 12-15 hours.)

Slice the fruit leather into strips.

To store it, roll it in plastic wrap and place in an airtight container in the refrigerator or freezer.
