Making Pesto with Sophie - A Garden of Hope Recipe



  • 3-4 cloves of minced garlic
  • 2 cups basil
  • ½ cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
  • ½ cup extra virgin olive oil
  • ¼ t. salt
  • ⅛ t. pepper


Wash and thoroughly dry 2 cups of basil
Place in food processor or blender and pulse several times
Add the parmesan cheese and garlic, and pulse several times
Scrape down sides, and stream in olive oil from the top while food processor is running
Add salt and pepper to taste


Toss with pasta for a quick sauce, dollop over baked potatoes or other vegetables, spread onto crackers or toasted slices of bread, serve atop chicken or salmon.
